Cees Helder, the first Dutch chef-cook obtaining a third Michelin star, sold his Rotterdam restaurant ‘Parkheuvel’. What he lacks most is the pot ‘in which it’s happening’, looking melancholically back to the last plate he passed on.
Erik Van Loo, the new chef of ‘Parkheuvel’ has a mission: finding the essence of taste. To ever win a third star, too. To do so, he needs to work 14 hours per day, while clearing his head to create new courses.
Paul Van Craenenbroeck was Head Inspector of Michelin for the Benelux for 25 years. He shares with us his passion as a taster: ‘Extracting one’s appreciation from the work of another’.
